Palmas Sherry – The life of Fino

If you are a fan of Tio Pepe then you might be curious to try the Tio Pepe Fino Palmas range and discover what happens to this classic Fino when you continue to age it under flor (the delicate layer of yeast) beyond its usual four years within the Solera system.

The Palmas range is an annual release of four rare, barrel-selected Fino and amontillado sherries, all bottled “en rama” in its most natural state.  For almost two centuries, we have used the palma chalk mark system to classify the highest quality Finos based on their age and finesse. The youngest of these exceptional wines is given una palma while the older and rarer casks are given up to cuatro palmas.

Each year we invite a special guest to work alongside our Head Winemaker, Antonio Flores, IWC Fortified Winemaker of the Year 2016, to help select the new edition. This year Spanish wine expert Pedro Ballesteros MW visited Jerez to taste through over 100 wines and choose the very best barrels for the 2017 release of the Tio Pepe Fino Palmas Collection.
