It was never a symbolic voyage. It was the open sea. In February 2022, our flagship Fino embarked on the 94th Midshipmen’s Training Cruise aboard the Juan Sebastián de Elcano. Throughout the journey, it was exposed to the ship’s constant motion, and both the humidity and the salinity of the ocean. It returned shaped not by time alone, but by the very rhythm of the sea.
In a sherry as delicate as a Fino, this neverending motion gave rise to a remarkable phenomenon: a form of submerged ageing that imparts singular nuances to a wine already alive by nature.

Variety: 100% Palomino Fino.
Alcohol Content: 15.67% Vol.
Appearance: Golden yellow with olive-green highlights, slightly hazy from the suspended yeasts, an expression of its living character.
Nose: Pungent and expressive, with delicate oxidative notes. Aromas of oak and freshly baked bread intertwine with a subtle saline character shaped by its voyage.
Palate: Fine, vibrant and gently spiced. Savoury and dynamic, it retains the freshness of a classic Fino while bringing a unique, almost electric vitality.
Fish and seafood find a natural home in this Fino. It is especially well accompanied by oily fish, where its fresh, maritime profile complements bold flavours while retaining its remarkable lightness.
