Aged statically in American oak casks, each and every bottle reflects an understanding of the passage of time that belongs to Jerez alone. A limited edition for those who know the best stories cannot be rushed.
Time doesn’t touch this wine, it perfects it.
Variety: 100% Palomino Fino.
Alcohol Content: 22% Vol.
This vintage Palo Cortado is from the harvest of 1970. After fermentation, it began its long oxidative ageing in American oak casks, where it has evolved over decades, at rest and undisturbed. The result is a wine of remarkable complexity, of which only 2,987 bottles exist today.
Appearance: Intense, bright amber in colour, with a steely rim and coppery glints that reveal the depth of its long ageing.
Nose: Elegant and complex. Nuts, candied orange peel, vanilla, tobacco and fine woods intertwine with delicate oxidative notes.
Palate: Velvety and immersive, with a magnificent balance between oxidative ageing and hints of walnut and caramel. The finish is long, persistent and deeply aromatic.
Before serving, open the bottle and let the wine breathe for a few minutes to reveal all its complexity. It is best enjoyed at room temperature, with well-aged cheeses and long-cured meats. Although, more often than not the best pairing is the very moment itself.
